Diced Potatoes
A cinch with a pinch of Peg's! Perfect for summer picnics or snowy evenings. There are no measurements needed. Just make what you need and season with Peg's Salt.
1. Cube potatoes into 1-inch pieces, leaving skins on
2. Drizzle with melted butter or olive oil until cubes are well coated
3. Toss with a generous amount of Peg's Salt until cubes are seasoned*
4. Add a few dashes of pepper and toss again
Spread a large rectangle of aluminum foil on a cookie sheet--big enough to fully wrap the potatoes in. (If the foil isn't big enough, you can use two pieces of foil. Just fold them together a few times along one longer edge to create a seam.)
Grease the foil with oil or butter. Pour potatoes onto foiled cookie sheet and cover the top and then fold up the sides. Bake at 325 degrees for 50 minutes or longer if you are using a lot of potatoes. (For crispier potatoes, open the foil after 25 minutes and let them brown.)
*For 6 c. of potatoes, I use 1.5 tsp. of Peg's Salt
